Full recipe:
Ingredients:
-
2 lbs pork belly, cut into 1-inch cubes
-
1/4 cup brown sugar
-
1/4 cup honey
-
1/4 cup BBQ sauce
-
2 tablespoons soy sauce
-
1 tablespoon apple cider vinegar
-
1 tablespoon Dijon mustard
-
1 teaspoon smoked paprika
-
1/2 teaspoon garlic powder
-
1/2 teaspoon onion powder
-
1/2 teaspoon ground black pepper
-
1/4 teaspoon salt
-
1/4 teaspoon cayenne pepper
-
1/4 cup melted butter
Directions:
-
Preheat your smoker or grill to 225°F (107°C).
-
Cut the pork belly into 1-inch cubes and season evenly with salt, pepper, smoked paprika, garlic powder, and onion powder.
-
Place the seasoned pork belly pieces on the smoker or grill and cook for 2-3 hours, until they are tender and have developed a smoky flavor.
-
While the pork belly is cooking, prepare the glaze by combining brown sugar, honey, BBQ sauce, soy sauce, apple cider vinegar, Dijon mustard, and cayenne pepper in a saucepan over medium heat. Stir until the sugar has dissolved and the glaze thickens slightly.
-
Once the pork belly cubes are done, remove them from the smoker or grill and place them in a large bowl.
-
Pour the glaze over the pork belly pieces and toss to coat.
-
Return the glazed pork belly cubes to the smoker or grill and cook for an additional 30-45 minutes, or until the glaze has caramelized and the pork belly is crispy on the edges.
-
Remove from heat, drizzle with melted butter, and serve immediately.
